Who Has Left Over Pork Tenderloin?
I love making pork tenderloin! It can come already marinated or I can use my own marinade. It’s simple, quick, and reasonably priced. The problem is, we always have so much left over, and I never know what to do with it. Last night, we used the leftovers to make a Pork Tenderloin Panini, and the results were delicious! Actually, it is my favorite panini so far!
If you don’t already have one, invest the $40 in a sandwich/panini maker. There are so many concoctions you can come up with and it’s a great way to use up leftovers! I usually have an amazing dish in minutes!
All I put on my panini was fresh mozzarella and leftover pork tenderloin and, in my opinion, that was all it needed. I added some basil pesto to my daughter’s, and my husband wanted mayo on his, but we didn’t have any in the house.
First, I had a fresh loaf of bread from my local grocery store. Regular sandwich bread will work, but there’s something about the fresh loaf that makes any panini a little bit better. Use that fresh loaf up because no matter what I do, it never has the same freshness the next day. After slicing up the loaf, I put a piece of fresh mozzarella on one slice, topped it with a slice of pork tenderloin, added another slice of fresh mozzarella, put the other piece of bread on top, and popped it in my panini maker. In about 1-2 minutes, the pork tenderloin panini was ready! So simple and so good! Actually, we all had seconds!

Any additional toppings you may like (optional)
- If you are cooking the pork tenderloin, follow the package instructions. If you are using leftovers, heat up your panini maker.
- Assemble your sandwich. I did bread, slice of mozzarella, slice of pork tenderloin, slice of mozzarella, bread.
- Put in your panini maker and grill until cheese is melted and bread is crisp. *I suppose if you don’t have a panini maker you could grill it on the stove like you would a grilled cheese.
- Enjoy and be happy that your leftovers didn’t go to waste!
