What In The World Is A Cocktail Tomato?
When my father-in-law was in town, he and my husband took a trip to the grocery store so we could whip up some dinner. They came home with some random items including a few cocktail tomatoes. I assumed he was going to make an adult beverage with them, but they were actually for our meal. I have to say, they are the best tomatoes I’ve ever had and by far the most flavorful!
“Tomatoes, Tomatoes! What Am I Going To Do With You?”
Our main dish was my husband’s famous lamb chops, and I really didn’t have much to work with. Since I’ve become quite obsessed with grilling, I decided let’s grill these babies! I had a sweet onion on hand, and since everything is ALWAYS better with sweet onion, I cut some up to go with the tomatoes.
Drizzle olive oil all over them, generously season with iodized salt (more on that later), and some pepper.
We put them in a grid basket (I think that’s what it’s called?) and just kept turn it every few minutes.
I can’t even explain how delicious these were. I actually had a friend say, “I feel like a pig. I’m just picking they tomatoes and onions up with my fingers, and I don’t even like tomatoes. But, I can’t stop eating this!” Friends, this veggie dish is addicting, and it’s even good right out of the refrigerator.
It’s kind of funny, we probably would have grilled them longer, but we ran out of propane! Ha! But, we did grill them long enough to lock in all that flavor! At least we got the lamb chops done!
If we are lucky, maybe my husband will teach us his trick to making those mouth-watering lamb chops one day!
If you are a mom like me, you probably try to find different ways for your family to eat their veggies! My two-year-old LOVES these (actually, she prefers the onions!). Stop by this post for another great idea to add veggies to your meals!
- Cocktail Tomatoes, sliced
- 1 Sweet Onion, sliced
- Olive Oil
- Generous amount of Iodized Salt
- Pepper to taste
- Heat the grill up to medium-high heat
- Arrange sliced cocktail tomatoes and onions on a dish
- Drizzle olive oil over the vegetables. Use a spoon or cooking brush to spread the olive oil over each veggie.
- Generously salt
- Pepper to taste
- Place tomatoes and onions in a grid basket and grill to desired doneness. Serve immediately.
- Don’t forget to munch on the leftovers right out of the fridge for a quick and vegetable filled snack!
Let me know how it goes! I’d love to hear your variations!
Shout out to my husband for bringing home cocktail tomatoes! Fire up that I now know how delicious they are!
